VEGETARIAN GRAVY 1/2 cup nutritional yeast 1/4 cup all-purpose flour 1/3 veg. oil 2 cups water or veg. broth 2 to 3 tbsp reduced-sodium soy sauce 3/4 tsp salt, or less 1/8 tsp pepper Toast the yeast and flour in a saucepan until you can start to smell it. Add the oil and stir while it bubbles and turns golden brown. Add water or broth, still stirring with a whisk, until it changes to gravy consistency. Stir in soy sauce, salt, and pepper. NOTES: Oriental toasted sesmae oil can be used instead of normal vegetable oil. This will make it richer, but also heavier. Other flours can also be used--chickpea flour, etc.--for variants on the above. 3/4 tsp is probably way too much salt. Sage can also be added, if you like--maybe 1/8 tsp. GOLDEN GRAVY 1/2 c. flour 1/2 c. nutritional yeast flakes 1/3 c. oil or margarine 1 1/2 c. water 2-3 t. soy sauce or tamari Salt (optional) and pepper to taste Toast the flour and nutritional yeast flakes in a pan until they give off a nutty aroma. Add oil and stir until bubbly. Add water and cook until mixture begins to thicken, stirring constantly. Add soy sauce and salt (optional) and pepper. makes approximately 2 c..
