Pesto 2 cups fresh basil leaves 4 good sized garlic cloves, peeled and chopped (or pressed) 1 cup shelled walnuts 1 cup best quality olive oil 1 cup freshly grated parmesan 1/4 cup freshly grated romano (optional) salt and freshly ground black pepper to taste. Chop basil with garlic and walnuts (If the walnuts are large, process them first to chop into small pieces). With motor running add olive oil in slow steady stream.
