MACARONI AND CHICKPEA SALAD 1/2 c. uncooked macaroni 1 can of chickpeas, drained and mashed with a fork 1 c. Nayonaise or other eggless mayonnaise 1 small onion, chopped 2 stalks of celery, chopped onion salt to taste pinch of dill seed 1 T. margarine for the cooked macaroni Boil the macaroni, and meanwhile mix the chickpeas and other ingredients in a bowl. Drain the cooked macaroni and add margarine. Add the chickpea mixture to the macaroni and mix it all together, adding a little water from moisture. Serve as is (slightly warm) or refrigerate. This preparation works well as a main dish, side dish, or sandwich ingredient. Serves 4-6.
