Hummus Bi Tahini from _The Electric Vegetarian_ Serves 4-6 Preparation Time: 5 minutes This tasty puree is a nutritious main dish when served as a filling for Whole Wheat Pita Break or an excellent appetizer when served with raw vegetables. 1 clove garlic 2 cups well-cooked garbanzo beans juice of 1 lemon 3-4 tablespoons cold water 1/4 cup Sesame Tahini 1/2 teaspoon salt 1 tablespoon olive oil dash cayenne pepper, optional fresh coriander for garnish crushed red pepper, optional Metal blade: Add garlic to work bowl and process until finely minced. Add garbanzo beans, lemon juice, water, tahini and salt. Process until smooth, scraping down the sides of the bowl with a spatula as needed. Taste and adjust seasoning. Spread hummus in a shallow dish. Dribble on olive oil, place a pinch of crushed red pepper in the center and garnish with coriander.
