Garbanzo Salad 1 lb canned garbanzos 2 Tbsp onions, minced 2 Tbsp parsley, chopped 3 medium carrots, cooked and diced 1/4 cup olive oil 2 Tbsp vinegar salt and pepper to taste lettuce leaves 8 olives, sliced (ripe or green) 2 hard-boiled eggs, quartered mayonnaise Rinse beans in cold water, drain well. Mix beans, carrots, onions, parsley. Stir with oil, vinegar, salt & pepper. Chill well. Mound on lettuce, garnish. Mayo goes on the side.
